Cooking methods for pork on the grill

 
  • Always cook meats as far away from the heat source as possible.
  • For beautiful markings on your grills, rotate the meat one quarter turn clockwise midway through cooking each side.
  • Before serving, always check the degree of doneness with a meat thermometer, particularly hamburger and tenderized meats.
  • Once the meat is cooked, it should be wrapped loosely in foil and left standing for 5 minutes or so. This allows the fibres to relax and the juices to circulate through the flesh for maximum taste and tenderness.

Stuffed pork tenderloins


 

Oven cooking : Preheat oven to 350°F (180°C). Sear the tenderloin in a little oil over medium heat. Oven roast for 20-25 min.

BBQ cooking : Brush cold grill with vegetable oil. Preheat to high for 5 min., then lower to medium-high to cook. Grill with lid down for 20 min. 

Expert Tips : Use a meat thermometer. Internal temperature: 160°F (71°C). After cooking, tent with foil and let rest 3-5 min.

 

Accompaniments : Serve with sweet potatoes, spinach, zucchini, or caramelized pineapple. Potato salad is also a great idea.





Racks of pork


 

Oven cooking :
Preheat oven to 375°F (170°). Roast uncovered for 40-60 min.

BBQ cooking :
Preheat grill to medium for 5 min., then lower to medium-low to cook. Sear meat on both sides on oiled grill. Place on an oiled sheet of foil, and cook over low heat for approximately 60 min.

Expert tips : Wrap pork bones in foil to prevent burning. Use a meat thermometer. Internal temperature: 155°F (68°C). After cooking, tent the meat with foil and let rest 15 min.
 

Accompaniments : Delicious with squash couscous, or a mango Mozzarina salad with citrus dressing.





Stuffed loin roasts


 

Oven cooking :
Preheat oven to 325°F (170°C). Sear the meat on both sides over medium heat in a little oil. Roast uncovered for 40-60 min.

BBQ cooking :
Brush cold grill with vegetable oil. Preheat to medium for 5 min. Sear the meat for a few minutes on both sides. Continue cooking over indirect heat, lid down, for 50-70 min.

Expert tips : Use a meat thermometer. Internal temperature: 158°F (70°C). After cooking, tent the meat with foil and let rest 15 min.
 

Accompaniments : Savour with stewed sweet potatoes in bouillon, zucchini rice, broccoli gratin, beet confit, or balsamicspinach salad.
