Grilling brochettes on the BBQ
What can be better than beautiful brochettes grilling on the barbecue?
- Select your favourite vegetables
Mushrooms
Onions
Eggplant
Zucchini
Peppers (any colours)
Cherry tomatoes
- Don't forget your favorite fruits
Apple
Mango
Pineapple
Dried dates
Dried prunes
Dried apricots
Mango and Pineapple mix perfectly well with cubes of pork!
You can marinate the ingredients individually or already skewered.
If you do chose to do this, they should be allowed to marinate for
at least one hour to give them time to absorb the flavours. And to
keep your brochettes soft and juicy while grilling, baste them
often with marinade.
As far as the cuts of meat to use, choose more tender and juicy
meats or poultry because brochettes take very little time to cook,
8 to 12 minutes, depending on the size of the cubes.
Suggestions :
- Beef brochettes, try cubes from the inside round.
- Lamb, select pieces from the leg.
- Pork, buy pieces from the leg or loin.
- Satays, use tenderloin strips.
- Veal, use loin cubes.
- Chicken and turkey, the breast is ideal for cubes or
strips.
