Here is a simple tip for checking the doneness of a steak
without cutting it and losing juice and flavour.
One by one touch the fingers of your left hand to the thumb, as if
to measure a pinch of salt, feeling the base of the thumb each time
with a finger of your right hand. Its give or firmness indicates a
degree of doneness.
Thumb/index finger = rare
Thumb/middle finger = medium
Thumb/third finger = medium-well
Thumb/little finger = well done
