Nutritional value and storage life

Nutritional value

With today’s trend to reduce fat consumption, veal is the lean meat par excellence! Indeed, its low fat content makes it the perfect choice for the weight conscious.
Like all other meats in your METRO butcher’s counter, veal is an excellent source of protein. It also contains vitamin B12, zinc, magnesium and iron.

Storage life
If the meat is cooked, it should be cooled to 60° C (140° F) and refrigerated, half covered, even if still warm. Once it has cooled completely, it should be placed in an air-tight container or wrapped in plastic and foil.

Meat can either be frozen in its original package, wrapped in plastic and foil, in a freezer bag, or in a freezer-safe container.

The safest method of defrosting veal is in the refrigerator. Keep the meat in its freezer packaging, pierce a few holes on the bottom; rest on a plate or bowl in the coldest part of the refrigerator. Allow 10 hours per kilo (5 hours per pound).

Defrosting in the microwave is not recommended. Often times, only certain parts of the meat are defrosted while others remain frozen. If you do opt for this method, the meat should be cooked immediately.
