Choose meat that is firm and pink. You can keep veal in the fridge for up to two days. You can keep veal in your freezer for up to two weeks in its original wrapping, or for a total of three months if the meat is properly sealed. Avoid any chance of bacterial contamination by defrosting veal in the refrigerator or in the microwave. Veal should be lightly pink and juicy when served in order to fully enjoy the qualities of this tender meat.

The grain-fed veal industry, always interested in improving their product and in guaranteeing the best quality, has, over the last few years, implemented a program of certification and traceability. Nothing is easier than cooking chops. Brush with a touch of oil and sear over medium heat. Continue cooking over low heat for about three minutes each side before serving.
Slices are quick and easy to prepare along with your favourite garden vegetables. Let yourself be inspired by Asian cuisine, and create stir-fries using a saucepan or a wok and a drop of high-quality oil. Or let Mexican cuisine be your guide to create delicious fajitas.
Brown cubes of veal in a little canola oil, then cover them in a hot liquid. Allow to simmer over medium-low heat or in oven at 325°F (160°C). Cooking time can be from 1 to 1 1/2 hours.
Sear scallops in a little oil over high heat for no more than 1 minute on each side. This helps the meat keep that tenderness you expect from grain-fed veal. This cut is ideal for stuffed rolls.
Veal filets and sirloins, tender to perfection, are really a delight you won't want to miss. Sear meat over high heat using just a hint of oil. Finish baking in the oven for about 15 minutes.
In order to maintain the fine grain of organ meats, you must cook them on high heat. Be careful not to overcook.
Shanks must be seared over high heat in a drop of oil and cooked in oven covered with heated broth.
To obtain a tender, juicy roast, sear meat in a very hot oven for about 15 minutes. Continue roasting at 300°F (150°C). Preferably the meat should be a little bit marbled to avoid drying out.
The low fat content of grain-fed veal makes it the ideal choice for all recipes requiring ground meat. Its refined flavour enhances the simplest recipe. Prepare ground veal to your taste but always cook it well.
