When buying pheasant, make sure that the limbs are intact. The skin and the fat should have a golden colour and the flesh should be dark.

If buying frozen pheasant, make sure that the packaging is well-sealed and intact, showing no sign of ice crystals or discolouration due to freezer burn.

A 1-kilo (2-pound) pheasant will serve two people. Calculate 350 to 450 grams (3/4 to 1 pound) of whole raw poultry per portion.
