Garlic, tarragon, thyme and savoury will enhance the
flavour of chicken.
Baste the chicken with fruit vinegar or lemon, lime or orange
juice. Fresh fruit, peaches, plums and cherry purées are excellent
for basting chicken and give it a delightful and unusual
flavour!
For a very golden chicken, coat with either Dijon mustard, honey
mustard, curry, Cajun spiced or Hoisin sauce.
Brush chicken pieces with low-fat marinade of herbs, spices, fruit
juice or wine. For a spicier touch, add crushed red peppers, fresh
rosemary, garlic and olive oil. Mix yogurt with curry and fresh
coriander. For a Mediterranean accent, mix olive oil with crushed
garlic and chopped fresh herbs.
