Game meats

Animals such as deer, moose, caribou, bison, wapiti and (wild) boar fall into a category called venison.

Hunting for game, a practice that is centuries old, is now subject to rules and regulations that vary according to country and season. In most cases, these rules and regulations are set primarily to protect the animal species in their natural habitat.

Today, the term “wild” is used to differentiate between animals hunted in the wild from farm-bred animals. Most game meats sold on the market today come from specialized breeding farms, which means that the meat is more readily available, always tender, and of the highest quality.

Most game meats are very lean, very tasty, and have a very distinct flavour. Except for (wild) boar, game meats are prepared like any other red meat in your butcher’s counter. One thing to remember though: game meat cooks much faster than other red meats so cooking times should always be less.
