Crescent roll 101
The light, flaky, crescent-shaped breakfast roll is made from white, yeast-raised dough, interleaved with butter, cut in triangle shape, rolled with a point on the outside and bent into a crescent shape before baking. This French pastry was created in 1683.

At that time, the Austrian capital was occupied by theTurks. One night, the bakers of Vienna heard the noise of the enemy approaching and sounded the alarm, which foiled the assault. The Ottomans were later defeated thanks to the arrival of 25,000 men mobilized by the King of Poland, John III Sobieski. As a token of his gratitude, the king awarded the bakers the privilege of creating a pastry to commemorate the event. They created the hörnchen, “little horn” in German, an allusion to the crescent shape on the Turkish flag. It was Marie-Antoinette, upon leaving Austria in 1770, who introduced the “croissant” to the Court of the King of France.
