What is light charcuterie?
We know for a fact that most deli meats are high in fat and
calories.To reduce the fat and calories, choose lean cooked, boiled
or raw hams and light terrines.
- Use leaner meats such as poultry or rabbit.
- Replace pork fat with a leaner product.
- Substitute lipids for broth mixed with starch, herbs and spices.
Water, soy protein or milk is added to the deli meat to give it more texture.
Also on the market are vegetarian deli products such as pâtés, pepperoni, bacon or sausage that are made from soy and cereal, without preservatives or nitrite.
Since the adoption of Health Canada’s new ruling, it is now mandatory for food manufacturers to print the list of the nutritional value and the amount of calories on most pre-packaged products. They must provide information on the 12 most important nutritional elements:
- Proteins
- Lipids
- Saturated fats
- Tans fats
- Cholesterol
- Carbohydrates
- Sugars
- Sodium
- Calcium
- Iron
- Vitamin A
- Vitamin C
- Fibre
As a rule, a content of 5% or less is considered low; 15% or more is considered high.
