A festival of colour is yours with squash !

You often hear autumn leaves called a festival of colour, but have you ever paused to consider the festival of colour that squash display? No? Then why not take a moment to discover these little known treasures we call winter squash!

We are constantly amazed at the spectacular shapes and colours taken on by squash of all sorts – pumpkins, winter squash, turban squash, butternut squash or spaghetti squash, for example. They appeal to our senses of touch and sight. Too often, however, we discard them simply because we don't know what to do with them ... apart, that is, from carving an eye-catching Jack-o-lantern for Halloween.

A pity, yes! But what better time to learn more about, and appreciate the many secrets of squash, than during the festival of colour now welcoming you to Metro's supermarkets everywhere?

To begin with, squash come in two broad types: winter squash and summer squash. Winter squash -- those most plentiful at the moment -- display greater variety in shapes, colours and textures. Their skin is much thicker, non-edible and serves to protect their sweet flesh. We are more familiar with the summer varieties -- zucchini, marrow squash, summer squash -- harvested early, having softer skin that is edible, and flesh that is not quite so sweet.

Both winter and summer squash are very low in calories, though winter squash may contain slightly more calories because their flesh is higher in carbohydrates. They are higher in fibre and are an excellent source of potassium and vitamin A. Squash also contain vitamin C, folic acid, calcium and iron. The stronger its orange colour, the more vitamin A it contains.

Squash lend themselves well to dishes from main courses to desserts! Soups, mixed vegetables, stews or pies, the pulpy flesh of squash is delicious in a thousand and one ways.
