Cool Summer Soups

When people think of Spanish cooking, they think of tapas but especially of gazpacho, the ever-popular cold soup made with tomatoes, cucumber, sweet pepper and garlic. Refreshing like all cold soups, gazpacho is a summer favourite!

Gourmet Gazpacho

Gazpacho is probably the fastest, easiest soup to make. Put all the ingredients in a blender or food processor, pulse a few seconds and it’s ready! For a gourmet presentation, serve it in blanched, cored green peppers on a bed of crushed ice. Now that’s cool!

Cold Soup = Healthy Delight

Cold soups may seem like an odd idea at first, but their frosty flavour is delightfully mouth-tingling. Use the wealth of fresh summer fruit and vegetables to create sensational cool soups. The following are just a few of the combinations possible.

  • Carrots, chicken broth, ginger and coriander.
  • Cucumber, yogurt, tomato, garlic, chives and mint.
  • Mango, yellow pepper, chicken broth and basil.
