Bok Choy

 
Bok choy is one of the 33 varieties of Chinese cabbage found in Asia; it is however, the only one to enjoy any popularity in the western world.

Bok choy (or Pak choi) originated in China and was introduced in the United States by the Chinese involved in the Gold Rush at the end of the 19th century.

 

Characteristics
Bok choy is similar to celery and Swiss chard. Its white stems are mild, juicy and crunchy. Its veined leaves are dark green and milder tasting than those of cabbage. There are many varieties of Bok choy, some with long stems and some with short stems.
Culinary tips and advice
  • Look for Bok Choy Chinese cabbage with compact, firm and fresh stems, with no brown spots. If you are going to be cooking the leaves, they can be slightly soft.
  • Bok Choy can be eaten raw, cooked or marinated.
  • You should wash Bok Choy only when you are ready to use it. Start by removing the number of leaves you need and cut off the base of each. Slice the leafy part and then cut the stem in large chunks.
  • To prepare Bok choy Chinese style, first cook the stems, adding the leafy portions only at the last minute because they take less time to cook. For stems that are slightly crunchy in texture, do not cook for more than a few minutes.
  • Bok Choy can be used in soups or prepared au gratin. It can be mixed into rice or stir fried and served as a side dish with other oriental vegetables.
  • Bok choy can replace Swiss chard or spinach in any recipe.

Nutritional Value

Cooked Bok choy is an excellent source of vitamin A and potassium. It is also a good source of vitamin C and folic acid, and contains vitamin B6, calcium and iron.

Storage Life

Bok choy should be stored in a perforated plastic bag, in the vegetable compartment of your refrigerator. Like all other varieties of cabbage, it is preferable to use it as soon as possible after purchase for maximum flavour and crunch. Bok choy should not be washed until you are ready to use it.¸
