Spaghetti Squash

Spaghetti squash is very interesting because of its filaments change while cooking and look quite similar to spaghetti.

It tastes nothing like spaghetti, however. It has a slight sweetness and is crunchy and watery when cooked right. Children love it.

Spaghetti squash characteristics

Spaghetti Squash, a summer squash with properties similar to winter squash, measures 20-35 centimetres in length and can weigh up to two kilos. It can be round or oval, with creamy white or yellow skin.

Culinary tips and advice
  • Spaghetti squash should be whole and firm without blemishes or cracks. 
  • A green spaghetti squash means it was picked before ripening and should be avoided.
  • To roast whole in the oven, make several incisions in the skin and cook in a 180° C (350° F) oven for 60 to 90 minutes. Use the same method to cook squash halved but do not cook longer than 30-45 minutes.
  • Spaghetti squash is microwavable. Cut it in half leaving the skin on. Scoop out the seeds and place the halves either skin-side up or down in a Pyrex dish with a small amount of water. Cook at high heat for 12 to 15 minutes.
  • Spaghetti squash can also be boiled whole for about 45 minutes or cut into large pieces for 20 minutes.
  • No matter how it is prepared, it is important to remember that overcooking will alter the taste and affect the texture of the interesting filaments that give it its name.
  • Once cooked, the spaghetti-like filaments must be separated using a fork.
  • Well drained, this squash can be served with any spaghetti sauce! It can also be served with olive oil and a small amount of sea salt, or with clams in a tomato sauce.
  • Can also be used in soups or served as a vegetable accompaniment.
  • As a final suggestion, the flesh of this squash can be grated and served raw, like a celery remoulade.
