Green pea

The fresh green pea is soft, sweet and can be eaten raw or cooked slightly. In Canada, green peas are classified as "fancy", "choice" and "regular", according to their size, their colour and their tenderness.
It is served with meats, poultry or other vegetables; it is excellent in clear soups, cream soups and salads.
