Split pea
Split peas are yellow or green, they are sold whole or split in half. Less starchy than other varieties, they cook more quickly, taking about 90 minutes or less.
- Split peas should be cooked only until soft to preserve their
shape; overcooking will cause them to fall apart.
- Split peas are generally used to make mushy peas. They are also used in clear soups, cream soups or served as a side dish to main meals.
