Sensational Salmon
Salmon is highly
appreciated among connoisseurs for its exquisite flavour, fine
texture and versatility. It can be served whole, in fillets,
steaks, rolled and stuffed, etc. and prepared in countless
different ways. Salmon with a ginger-spiced coconut-milk sauce is a
dish redolent of Asia; with a mint-mango salsa, it’s a flood
of fresh flavour, or with coriander butter, a dish of understated
elegance.
To experience salmon at its tastiest, cook it directly on the
grill. Just make sure the grill is clean and oiled. Salmon can also
be cooked wrapped in foil. Whole salmon should be marinated first
(no more than 30 minutes) or basted often during cooking. Combine
oil with lime juice, garlic and fresh herbs. Brush this sauce on
the fish and prepare your taste buds for a treat! Close the
barbecue and cook 12-15 minutes per inch of thickness.

According to many studies, eating fish 2 or 3 times a week is good for the heart; helps prevent some cancers (colon, breast) and treat skin disorders like eczema and psoriasis. These benefits are due in large part to the omega-3 fatty acids in fish. Since fish is low in calories, it also helps maintain a healthy weight. So enjoy fish—fresh, canned, smoked, in sushi—in good health!
