Marlin

 

Marlin is found in warm ocean waters around the world, where it follows mild currents that oscillate between 15-30 degrees Celsius.

 

Characteristics

Marlin, or Blue Marlin can reach 4 metres in length and weigh up to 600 kilograms. It has a dark blue back and a silvery white belly. 

Marlin has a long upper jaw shaped like a sword and no teeth. Its firm, medium-lean flesh is a deep-pink colour. It is particularly sought after by the Japanese who use it in sashimi.

  •  As well as pleasing raw fish fans who enjoy it in sashimi, marlin is delicious poached, grilled, braised, pan-fried, in kebobs, in salads, in fondue or in ceviche.

Marlin is available throughout the year but is most plentiful from May to September in your metro fishmonger's display!

Nutritional value

The marlin is a semi-fatty fish. For the weight conscious, it is best prepared steamed, poached or in parchment. As well as being an excellent source of protein, marlin is rich in vitamin B12, niacin, potassium and phosphorus.
