Bocourti (Pangasius Catfish)
Bocourti (Pangasius catfish) is known as Mekong
catfish and shark
catfish. The Bocourti is a
fresh water fish.
The adult bocourti can reach 1.30 metre and
weigh up to 45 kilograms. Despite its shark-like appearance, the
bocourti is very inoffensive. Omnivirous, it eats
mostly shellfish, small fish and algae.
Bocourti is boneless. It has fine white flesh and
a pronounced taste.

- The semi-fatty flesh of the bocourti adapts well to all methods of cooking but is especially delicious when steamed, pan-fried or baked in parchment.

conscious, poaching, steaming or cooking in parchment would be the
methods of choice.
