Use a paper towel to pat the trout dry and remove as much moisture as possible in order to avoid boiling the fish.

Citrus-soy Steamed Trout FilletsTrout filets
Cooking method: When frying trout, cook skin side down so it becomes crispy. The crisp skin will protect the delicate flesh. Then turn and cook on the flesh side for a few minutes. Once the fish is cooked, you can easily remove the skin.

In parchment paper, place the fish flesh side down on the vegetables so it absorbs their wonderful aromatic flavours.

Whole trout
Cooking method: Make several incisions on both sides of the thickest part of the fish so it cooks evenly. Stuff or cook it as is in a preheated 190° C (375° F) oven. Calculate 12-14 minutes per 2.5 cm (1 in.) thickness.

Smoked trout
Suggestions: Smoked trout can be used in many dishes such as frittatas, sandwiches, on pasta or pizza, in
avocado and citrus salads, in cones or wraps with pears or star fruit, or in crepes.
