A MILLION AND ONE WAYS TO PREPARE TROUT

Whole, cold smoked, hot smoked or ready-to-cook, trout is one of the most versatile fish in the kitchen.

In this booklet, Metro offers you several ideas to bring out the wonderful flavours of this fragrant fish.






HOW TO COOK TROUT

Use a paper towel to pat the trout dry and remove as much moisture as possible in order to avoid boiling the fish.

Trout filets
Cooking method: When frying trout, cook skin side down so it becomes crispy. The crisp skin will protect the delicate flesh. Then turn and cook on the flesh side for a few minutes. Once the fish is cooked, you can easily remove the skin.

For cooking en papillote, place the fish flesh side down on the vegetables so it absorbs their wonderful aromatic flavours.


Whole trout
Cooking method: Make a few incisions on both sides of the thickest part of the  fish so it cooks evenly. Stuff or  cook it as is in a preheated 190°C (375°F) oven.  Calculate 12-14 minutes per 2.5 cm (1 in.) thickness. Serve on preheated plates  because fish has a tendency to cool quickly.

Smoked trout
Suggestions: Smoked trout can be used in many dishes such as frittatas, sandwiches, on pasta or pizza, in avocado and citrus salads, in cones or wraps with pears or star fruit, or in crepes.





TROUT FILETS

Glazed trout filets
Two varieties: Maple/pepper and chipotle, cranberry
Cooking method: Cook in a preheated 190° C (375° F) oven for 12 minutes. Do not turn during cooking.

Sea salt encrusted trout filets
Two varieties: Citrus/coriander and hickory
Cooking method: Cook in a preheated 180° C (350° F) oven for 15 minutes on a rack covered in parchment paper. Do not turn during cooking


Marinated trout filets
One variety: Dijonnaise
Cooking method: Cook in a preheated pan on medium heat for 6 minutes per side, or in a preheated 180° C (350° F) oven for 12-15 minutes.


Trout filets stufed with pesto and nordic shrimp
Cooking method: Cook on the top rack of a preheated 200° C (400° F) oven for 6-10 minutes.


Seasoned trout filets
Three varieties: Thai, maple/pepper and chipotle, orange and cranberry
Cooking method: Cook in a preheated 180° C (350° F) oven on a rack covered in parchment paper for 15 minutes. Do not turn during cooking.



BROCHETTES

Trout brochettes with or without vegetables
Three varieties: Thai, maple/pepper and chipotle, orange and cranberry
Cooking method: Cook in a preheated 190° C (375° F) oven, 3 minutes per side (10-12 minutes total), or until the flesh is opaque.


Trout souvlaki
Three varieties: Thai, maple/pepper and chipotle, orange and cranberry
Cooking method: Cook quickly in a preheated pan on medium heat, 3 minutes on each side, or in a preheated
200° C (400° F). Place the souvlakis on anoiled rack under the grill for 3-4 minutes, watch while cooking.

TROUT STRIPS

Maple Syrup, Pepper and Chipotle Seasoned Trout SautéTrout strips, natural or seasoned
Three varieties: Maple/pepper and chipotle, Thai, roasted pepper and tomato
Cooking method: Reheat the strips in a small quantity of oil over medium heat 1-2 minutes. Don’t use oil for the seasoned varieties.
