Microwaving

Cooking fish fillets and steaks in the microwave gives susprising results. This method is much the same as cooking in parchment or in court-bouillon. The fish retains its full flavour and texture. You can even cook frozen fish in just a few minutes!

• Dice aromatic vegetables (carrots, celery…..).
• In a microwave-safe bowl or domed dish, arrange fish over the diced vegetables, with thickest parts of fish pointing outwards and thinner parts overlapping in the center of the dish.
• Season.
• Pour a little white wine or reduced fish stock over the fish.
• Cover dish with plastic wrap and vent by turning one corner.
• Cook on high for 5 minutes per 500 grams (1 pound) of fish.
• Fish is done when flesh separates easily when tested with a fork.
• Let stand for 2 to 5 minutes to finish cooking.
