Ingredients

  • 3 oz. (90 g) smoked salmon
  • 4 oz. (115 g) cream cheese
  • 2 tsp. (10 mL) lemon juice
  • 1 tbs. (15 mL) green onion, chopped
  • 1 tbs. (15 mL) capers, drained
  • 24 endive leaves
  • Chives to taste

Preparation

Save one slice of salmon for decoration, and cut into strips.
In a blender or food processor, combine the smoked salmon, cream cheese, lemon juice and green onion. Then purée.
Using a pastry bag or small spoon, garnish the tip of the endive with the salmon mixture. Decorate with strips of salmon and capers.
