Nutritional value of bread

As mentioned earlier, it is mandatory in Canada to enrich white flour with thiamine, riboflavin, niacin, folic acid and iron in the amounts required by the regulations established by the Canadian Food Inspection Agency. Vitamin B6, magnesium and calcium may also be added.

White bread or enriched white bread is made from enriched white flour. Because it is not permitted to add nutritional vitamins and minerals directly to the bread, the nutrients come from the flour. All-purpose bleached wheat flour must comply with the same rules, making it very nutritious!

Whole-wheat bread, being made from whole grain or bran, is very high in fibre which makes it wholesome and nutritious.

Remember also that the Canadian Food Guide for Healthy Eating recommends eating 5 to 12 portions of cereal products daily, preferably whole-grain or enriched products. All the more reason to visit your METRO bakery regularly!
