  1. Preheat the oven to 400°F/200°C.
  2. Place the meat in a roasting pan, fat side up.
  3. Season with fine herbs or a Dijon mustard-based mixture, but no salt.
  4. Brown the meat in the hot oven for 12-15 min.
  5. Reduce the oven temperature to 325°F/160°C (for veal roasts, reduce it to 275°F/140°C).
  6. Add just enough liquid (ex: water, stock, vegetable juice, wine) to cover the bottom of your roasting pan. If you like, add a few vegetables (ex: potatoes, carrots, parsnips).
  7. Insert a meat thermometer (as long as it's one that's meant for such temperatures).
  8. Continue cooking in the oven until the roast reaches the correct internal temperature.
  9. During cooking, baste the roast with pan juices to keep it moist.
  10. For a tender, juicy roast, remove the meat from the oven and cover it with a vented piece of foil. Let stand about 10 minutes to allow the juices to spread evenly throughout the meat.
