Dare to try pork medium rare
If pork is a treat,
medium rare it’s sinfully good. Following are tips, recipes,
choice cuts and cooking methods for pork that is truly delicious.
To enjoy pork in all its fineness and tenderness, though, remember
this: cook it medium rare!
Pork and a little creativity is all that’s needed to come up with meals that are quick, delicious, varied and nutritious. It’s available in any number of tasty cuts just waiting to be discovered. Chops, tenderloin, ground pork and roasts all are easy to name. But pork is also sold in cubes for kabobs and stews, in cutlets, and racks. Cook it in the frying pan, simmered or braised, in the oven, wok or on the barbecue. Marry it with sweet lime, mint, apples or mango. Season it with curry, cumin, allspice or fresh herbs. Pork is so juicy and tasty that -- well paired – it becomes a real treat!
- Use a meat thermometer and eat pork when it reaches 160 °F (70 °C), when its juice becomes clear. One exception only: ground pork, which must always be well cooked.
- To keep your pork chops from curling up while cooking, make a few incisions in the fat around the rim of the chop without touching the meat.
- After cooking, let your meat stand 10 to 15 minutes, lightly covered with aluminum foil. This lets the juices permeate the meat
Moist and slightly rare, pork is simply delicious
Pork is an excellent source of proteins, iron -- energy producers -- and zinc, essential in development of the immune system. This meat is also high in B vitamins. It’s a fact that pork supplies more vitamin B than other meats.
