Done to Perfection!
  • Start by browning the meat 12-15 minutes in a 400ºF (200ºC) oven, then reduce the temperature to 325ºF (160ºC).
  • A meat thermometer is very useful for successful roasting. Insert it in the thickest part of the roast, away from any bones or fat.

Beef Rare 135 ºF (57 ºC). 20 minutes per pound (450 g)
  Medium 155 ºF (68 ºC). 25 minutes per pound (450 g)
  Well-done 165 ºF (72 ºC). 30 minutes per pound (450 g)
Pork Medium 160 ºF (70 ºC). 40 minutes per pound (450 g)


  • Baste the meat regularly with pan juices to ensure a tender, juicy roast.
  • When the roast is done, take it out of the oven, cover with a sheet of foil in which steam vents have been cut and let stand 10 minutes. This allows the cooking juices to spread evenly through the roast for greater tenderness.

Remember that mechanically tenderized cuts like châteaubriand, French-style and tournedos roasts have to be thoroughly done.
