A roast makes dinner an occasion, the climax of a ritual that began with selecting the type and size of cut, a deal sealed with a wink of anticipatory delight at the butcher, and that culminated in the roast being set down in the centre of the table for all to admire. Each family has its own traditions, reinterpreted by each succeeding generation. Metro, a proud part of those traditions for fifty years, continues to outdo itself with Metro Quality Meats.Over the years, advances in roasting techniques, new and sophisticated cuts and a boom in accompaniments have transformed the roast into an everyday celebration. Bon appétit!
- Start by browning the meat 12-15 minutes in a 400ºF (200ºC) oven, then reduce the temperature to 325ºF (160ºC).
- A meat thermometer is very useful for successful roasting. Insert it in the thickest part of the roast, away from any bones or fat.
Temperature of meat and cooking time by degree of doneness
| Beef | Rare | 135 ºF (57 ºC). | 20 minutes per pound (450 g) |
| Medium | 155 ºF (68 ºC). | 25 minutes per pound (450 g) | |
| Well-done | 165 ºF (72 ºC). | 30 minutes per pound (450 g) | |
| Pork | Medium | 160 ºF (70 ºC). | 40 minutes per pound (450 g) |
- Baste the meat regularly with pan juices to ensure a tender, juicy roast.
- When the roast is done, take it out of the oven, cover with a sheet of foil in which steam vents have been cut and let stand 10 minutes. This allows the cooking juices to spread evenly through the roast for greater tenderness.
Remember that mechanically tenderized cuts like châteaubriand, French-style and tournedos roasts have to be thoroughly done.
Great chefs
and Sunday cooks agree: Metro’s Merit Quality meats are the
best. Plus, your Metro master butcher knows how to prepare 540
different cuts of meat. With such a fantastic selection, finding
the right one for your special occasion is no problem. For the
ultimate in beef, choose RedGrill AAA beef, sold exclusively at
Metro. Beautifully marbled with fat, it sets a world standard for
quality, tenderness and taste. Selected with care, the Canadian
triple A grade beef is hung for 14 days under stringently
controlled conditions of temperature and humidity — this is
called aging. The process deepens the flavour and increases
tenderness.
Young caballeros and señoritas love roast beef fajitas. Simply cut some sweet pepper and leftover roast beef into strips, brown in olive oil and add a few spoonfuls of Merit Selection Mexican salad mix. Serve on a tortilla with some grated cheese and a dollop of sour cream. Olé!
An excellent source of protein, meat also supplies essential minerals and vitamins like iron, zinc, potassium and vitamin B12. Meat will always be a key component of a balanced diet.
