Flavour-enhancing Seasonings for Your Tournedos
Did you know that "tournedos", by definition refers only to beef? It is a small slice of beef tenderloin about 1 in. (2 cm) thick, wrapped in a thin slice of bacon or pork fat and tied to keep it nice and round. Although "tournedos" refers to beef, many other meats, such as pork, lamb and veal are prepared in the same way.
The various types of tournedos are perfect for barbecuing. Since pork and poultry tournedos are more delicate, they should be placed on a sheet of lightly oiled aluminum foil to prevent scorching.
