Beef at its best

  • Bring meat to room temperature for a few minutes to avoid thermal shock.

  • Lightly coat the meat with olive oil or brush with a mixture of oil and mustard or herbs before cooking.

  • Rub the meat with spices.

  • Always use tongs (never a fork) to turn the meat or it will lose its juices and dry out. Only turn the meat
    once during cooking.

  • Press the top of the meat with the tongs to determine the degree of doneness. The more the meat resists,
    the more it’s cooked.

  • After cooking, loosely cover the meat with aluminum foil and let stand for a few minutes before serving.

Preheat a heavy skillet over high heat. Place the meat in the skillet, cook 3 minutes, turn and reduce heat to medium. 5-6 minutes per side

Heat a little butter and oil over medium-high heat. Sear the meat to brown well, turn, and cook over medium heat. 8 minutes

Sear both sides over high heat just until browned. Preheat the oven to 190º C (375º F). Finish cooking
meat in the oven.
