Bring meat to room temperature for a few minutes to avoid thermal shock.

Lightly coat the meat with olive oil or brush with a mixture of oil and mustard or herbs before cooking.

Rub the meat with spices.

Always use tongs (never a fork) to turn the meat or it will lose its juices and dry out. Only turn the meat
once during cooking.

Press the top of the meat with the tongs to determine the degree of doneness. The more the meat resists,
the more it’s cooked.

After cooking, loosely cover the meat with aluminum foil and let stand for a few minutes before serving.
