Aah the truffle…the mushroom that enjoys the finest gastronomic reputation in the world!
The truffle is a mushroom that grows underground on the roots of
trees, mostly oaks. For a long time, it was believed that thunder
created truffles; in actual fact, it was the heavy rains that
stirred the earth and exposed the truffles.
The truffle has been renowned and sought after for thousands of years for its unique taste. It has always been and continues to be a prestigious food.
Many truffle species exist and the most prized is the French Perigord truffle. The truffle is shaped like an irregular globular black mass with white marbled flesh.
The summer truffle, the Italian white truffle, has beige flesh. It is less fragrant than the black truffle. The different varieties of truffles available on the market are sold canned in water.

Because we do not live in Perigord, Alba or Piedmont, and eat so
few truffles, the only nutritional value we get out of the ones we
do eat is the pleasure!
For the lucky ones who can afford to eat fresh truffles, they are
particularly rich in potassium and a good source of iron.
