Recipe ingredients

  • Peanut oil as needed* for frying
  • 2 cups (500 mL) rotini cooked al dente
  • Salt to taste
  • Bean dip
  • 19-oz. (540-mL) can white beans drained*
  • 2 marinated dried tomatoes, finely chopped
  • 1/4 cup (60 mL) extra virgin olive oil*
  • 2 Tbsp. (30 mL) pesto sauce
  • 1 tsp. (5 mL) garlic salt
  • 1 tsp. (5 mL) Tabasco sauce.

Preparation

Heat oil to 350°F / 180°C.
Add cooked pasta to oil and fry about 1 minute.
Drain fried pasta and spread on paper towels.
Season.
In a bowl, mash white beans.
Add remaining ingredients and mix thoroughly. Serve with pasta.

Suggestion

Rotini can be replaced with any other bite-sized pasta.
