Recipe ingredients
- 1/4 cup (60 mL) Irresistible extra virgin olive oil
- 1/2 tsp. (2 mL) chopped fresh rosemary
- 2 cloves garlic, chopped
- 12 lamb chops, 1 po (2.5 cm) thick
- To Taste butter*, oil*
- 4 small tomatoes, sliced
- 3/4 cup (180 mL) grated Mozzarella cheese
- To taste romano cheese, oregano and paprika spices
- Salt and pepper to taste
Preparation
In a glass bowl, mix the olive oil, rosemary, garlic and pepper.
Baste the chops with the marinade and refrigerate for 20 minutes.
Preheat the oven to 180°C (350°F)
In a large ovenproof frying pan, sauté the chops in oil and butter for 2 minutes on each side.
Cover each chop with a slice of tomato and some mozzarella.
Sprinkle with the romano, oregano and paprika. Salt and pepper.
Bake in the oven about 3 to 5 minutes, depending on the desired degree of doneness.
Serve.
Suggestion
Marinating the lamb longer will give it more flavour.Put capers on the Mozzarella before cooking.Origin: Italian
