  • 2/3 cup (160 mL) butter
  • 1 cup (250 mL) julienned leek white
  • Red wine
  • 1/3 cup (80 mL) julienned celery
  • 3/4 cup (180 mL) julienned carrots
  • Salt and pepper

Preparation

Melt the butter and add the julienned vegetables.
Add a sufficient amount of red wine, season and cook by steaming.
Cool the vegetables and stuff the fish.
