Recipe ingredients

  • 1/2 cup (125 mL) syrup
  • Whole green peppercorn to taste
  • 2 pears
  • 1 Tbsp. (15 mL) mint extract
  • 4 mint leaves

Preparation

Syrup: In a pan, mix 1/2 cup (125 mL) water, 3 Tbsp. (45 mL) white sugar and 1 tsp. (5 mL) lemon juice; bring to a boil and simmer 2 minutes, stirring constantly.
In a pan, bring syrup to a boil; add green peppercorn.
Halve the pears; remove core with a melon baller.
Poach in syrup 10 minutes or until soft; set aside.
Remove core with a melon baller.
Moisten pear halves with cream of mint.
Garnish each pear half with a mint leaf.
