Recipe ingredients

  • 2 fresh fillets of haddock 4 oz (120 g) each
  • 1 Tbsp. (15 mL) lemon juice
  • 1 tsp. (5 mL) salt
  • Citrus Marinade
  • 2 Tbsp. (30 mL) lemon juice
  • 2 Tbsp. (30 mL) grapefruit juice
  • 2 Tbsp. (30 mL) unsweetened orange juice
  • 2 tsp. (10 mL) sesame seed oil
  • 3 Tbsp. (45 mL) extra virgin olive oil

Preparation

Combine marinade ingredients in a glass bowl. Add fillets, cover and refrigerate 20 minutes.
Remove fillets from marinade and drain well.
Boil water in a saucepan. Add lemon juice and salt.
Place haddock fillets in a single layer in a steamer over the simmering liquid. Cooking liquid must not reach the bottom of the steamer.
Cover and cook 10 to 12 minutes per inch (2.5 cm) of thickness.

Suggestion

Check for doneness with a fork; the fish should be tender and juicy.
