Recipe ingredients
- 2 fresh fillets of haddock 4 oz (120 g) each
- 1 Tbsp. (15 mL) lemon juice
- 1 tsp. (5 mL) salt
- Citrus Marinade
- 2 Tbsp. (30 mL) lemon juice
- 2 Tbsp. (30 mL) grapefruit juice
- 2 Tbsp. (30 mL) unsweetened orange juice
- 2 tsp. (10 mL) sesame seed oil
- 3 Tbsp. (45 mL) extra virgin olive oil
Preparation
Combine marinade ingredients in a glass bowl. Add fillets, cover and refrigerate 20 minutes.
Remove fillets from marinade and drain well.
Boil water in a saucepan. Add lemon juice and salt.
Place haddock fillets in a single layer in a steamer over the simmering liquid. Cooking liquid must not reach the bottom of the steamer.
Cover and cook 10 to 12 minutes per inch (2.5 cm) of thickness.
