Recipe ingredients

  • 4 x 4 oz (4 x 120 g)  fresh sole fillets
  • Sufficient quantity: butter* and oil*
  • Coating
  • 1/4 cup (60 mL) flour*
  • 2 tsp. (10 mL) Irresistibles paprika*
  • 2 tsp. (10 mL) crushed chilli
  • 1/2 tsp. (2 mL) Irresistibles Cayenne pepper*
  • 2 Tbsp. (30 mL) chopped fresh parsley
  • Salt and pepper to taste

Preparation

Combine coating ingredients in a bowl. Dredge fillets in coating mixture.
In a frying pan, brown dredged fillets of sole in oil and butter 5 to 8 minutes per inch (2.5 cm) of thickness.

Suggestion

Fish is done when it loses its sheen and flakes easily.
