Recipe ingredients
- 1 1/3 lb. (600 g) filets of sole, in chunks
- 1/4 lb. (115 g) fresh bacon*, in chunks
- 1 medium courgette, in chunks
- 4 tomatoes, quartered
- Marinade
- 1/4 cup (60 mL) extra virgin olive oil *
- 2 Tbsp. (30 mL) Worcestershire sauce
- 1 fresh lemon juice
- Tabasco sauce to taste
- 2 tsp. (10 mL) Irresistible dried fennel*
- Salt* and pepper * to taste
- Coating
- 1 cup (250 mL) wheat germ
- Chopped fresh herbs to taste.
Preparation
In a glass bowl, mix all the marinade ingredients.
Put filets of sole in the marinade. Cover and marinate1 hour in the refrigerator.
Preheat the barbecue to medium.
Remove filets of sole from the marinade and drain well.
Make 4 brochettes, alternating chunks of filet of sole, bacon, courgette and tomato.
Brush brochettes with olive oil and roll in wheat germ herb mixture.
Grill gently 6 minutes, turning often.
Suggestion
Fish deteriorates much more quickly than meat.It is best to cook the sole the day of purchase or as soon as possible.
