Recipe ingredients
- 4 fresh salmon steaks, 5 to 7 oz (150 g to 200 g) each
- Marinade
- 1/2 cup (125 mL) extra virgin olive oil*
- 1/4 cup (60 mL) lemon juice
- 1/4 cup (60 mL) white vermouth
- 2 Tbsp. (30 mL) grated onion
- 1 Tbsp. (15 mL) brown sugar
- 1 tsp. (5 mL) dried tarragon
- 1/2 tsp. (2 mL) powdered mustard
- Salt and pepper to taste.
Preparation
In a glass bowl, mix marinade ingredients together. Reserve part.
Place salmon steaks in remaining marinade, coating them well. Cover and refrigerate for 1 hr.
Preheat barbecue to medium heat.
Remove salmon steaks from marinade and drain well.
Place steaks in grill basket and cook on oiled grill. Normally, 5 to 7 minutes per side should be sufficient.
Suggestion
Substitute fennel seeds for tarragon.* We recommend Selection and Irresistibles products.
