Recipe ingredients

  • 4 trout fillets, 4 to 5 oz (120 g to 150 g) each
  • Marinade
  • 2 Tbsp. (30 mL) extra virgin olive oil*
  • 1 Tbsp. (15 mL) chopped rosemary
  • 1 Tbsp. (15 mL) chopped parsley
  • 2 Tbsp. (30 mL) lemon juice
  • 1 lemon, grated peel .

Preparation

Preheat barbecue to medium heat.
In a rectangular glass dish, mix marinade ingredients.
Place fillets in marinade and refrigerate for 30 minutes.
Remove trout from marinade and drain well.
Cook on covered barbecue. Normally, 2 to 3 minutes per side should be sufficient.

Suggestion

Rosemary has a strong, pungent flavour. Use sparingly so as not to overpower the dish.
