Recipe ingredients
- Croquettes
- 2 Tbsp. (30 mL) butter
- 2 Tbsp. (30 mL) oil
- 1 onion, chopped
- 1/4 cup (60 mL) diced celery
- 1 lb. (450 g) fresh ground chicken
- 1 Tbsp. (15 mL) chopped fresh parsley
- 1 Tbsp. (15 mL) lemon juice
- Salt and pepper to taste
- Mustard sauce
- 3/4 cup (175 mL) chicken bouillon
- 3/4 cup (175 mL) table cream
- 2 tsp. (10 mL) Dijon mustard
- To taste pepper
Preparation
Croquettes
In a frying pan, brown onion and celery in oil and butter 3 to 4 minutes. Cool in a bowl.
Add remaining ingredients to bowl. Blend well and shape into croquettes.
Fry croquettes in oil and butter about 3 minutes per side.
Sauce
Boil chicken bouillon about 5 minutes.
Add cream, mustard and pepper. Bring to a boil and remove from heat.
Pour sauce over the croquettes.

When adding cream to sauce, pour it over a spatula rather than directly into the pan.* We recommend Selection and Irresistibles products.
