Recipe ingredients
- 15 cloves garlic
- 2 Tbsp. (30 mL) Canola oil*
- 1 whole chicken*, 4 1/2 lb. (2 kg)
- 1 Tbsp. (15 mL) melted butter
- To taste fresh chopped parsley
- 1/4 tsp. (1 mL) dried thyme*
- 1/4 cup (60 mL) chicken broth*
Preparation
Preheat oven to 180ºC/350ºF.
Blend oil and butter in a glass bowl. Reserve.
Baste chicken with melted butter.
Put 5 garlic cloves, parsley and thyme inside chicken.
Put chicken on a rack in a roasting pan.
Pour chicken broth and remaining garlic cloves in the bottom of the roasting pan.
Roast about 40 minutes. Baste frequently.
Cover with aluminum foil and continue cooking 50 minutes.
Suggestion
Before serving, strain the sauce, being careful to crush the garlic cloves. Serve with the chicken.* We recommend Selection and Irresistibles products.
