Recipe ingredients

  • 1 1/3 lb. (600 g) fresh chicken, cubed (4 to 6 cubes/skewer)
  • 1/2 cup (125 mL) grated Parmesan cheese
  • 2 sprigs fresh rosemary
  • Onion Barbecue Sauce
  • 2 cloves garlic, chopped
  • 1 onion, chopped
  • 1/2 cup (125 mL) white wine
  • 1 cup (250 mL) barbecue sauce
  • 1/4 cup (60 mL) cranberry jelly

Preparation

Preheat the barbecue to medium heat.
Brown the onion and garlic in a butter/oil mixture for 1 minute in a pan. Add remaining sauce ingredients, bring to a boil and set aside.
Thread chicken cubes on skewers, then roll kebabs in Parmesan.
Place kebabs, sprinkled with rosemary on a sheet of oiled aluminium foil and barbecue 3 to 5 minutes per side.
When cooking time is almost finished, baste kebabs with onion barbecue sauce and continue cooking for 1 to 2 minutes.

Suggestion

The kebabs can also be rolled in a mixture of finely chopped toasted hazelnuts and grated Parmesan.
