Recipe ingredients
- 4 fresh boneless chicken breasts, 4 to 5 oz. (120 to 150 g) each
- Stuffing
- 1/2 cup (125 mL) grated mozzarella cheese
- 4 Whole scallions
- Cheese and Crab Sauce
- 1/4 cup (60 mL) 2% milk
- 1/2 cup (125 mL) cream cheese
- 1/2 cup (125 m) canned crab meat, drained
- 1/4 cup (60 mL) chopped red pepper
- 2 cloves garlic, crushed
- 2 Tbsp. (30 mL) raspberry vinegar
- Salt and pepper to taste
Preparation
Preheat the barbecue to medium heat.
Make a pocket in the centre of each chicken breast, stuff with mozzarella cheese and scallions and close with a toothpick or a small wooden skewer.
Place stuffed chicken breasts on a sheet of oiled aluminium foil and barbecue 5 to 7 minutes per side.
Sauce
In a pan, heat the milk, cream cheese and crabmeat.
Add red pepper and garlic and mix well. Heat without boiling.
Remove from heat and add raspberry vinegar. Season.
Top chicken breasts with sauce and serve.
