Recipe ingredients
- 1 Irresistibles air-chilled whole chicken
- Marinade
- 1 cup (250 mL) spicy Italian dressing*
- Orange Glaze
- 4 oranges, zest and juice
- 2 Tbsp. (30 mL) fresh grated ginger
- 3/4 cup (180 mL) liquid honey*
Preparation
Split chicken lengthways almost entirely and spread apart. Place butterflied chicken in dish.
Pour dressing over chicken and refrigerate for 30 minutes.
Preheat the barbecue to medium heat or the oven to 350°F (180°C).
Remove chicken from dressing and drain well.
Place chicken on a sheet of oiled aluminium foil or in in pan.
Mix orange glaze ingredients in a bowl. Set some aside.
Baste chicken with orange glaze, cover and cook on barbecue or cook in the oven for 40 to 45 minutes or until the temperature reads 185ºF (85ºC) or the legs come apart.
Baste frequently with reserved marinade during cooking.
Suggestion
Marinating Time: 30 minutes.Honey has a tendency to crystallize at room temperature. To liquefy it, simply heat the container in warm water for about 15 minutes.
