Recipe ingredients

  • 4 fresh chicken legs, with or without back, 4 to 5 oz. (120 to 150 g) each
  • To taste assorted fresh vegetables (potatoes, zucchini, mushrooms, peppers)
  • 1/2 cup (125 mL) tomato juice*
  • 2 tsp. (10 mL) Irresistibles paprika*
  • 1 tsp. (5 mL) Irresistibles dry mustard*
  • 2 tsp. (10 mL) Irresistibles celery seeds*
  • Salt and pepper to taste

Preparation

Preheat the barbecue to medium heat or the oven at 350°F (180°C).
Place chicken and vegetables on a sheet of oiled aluminium foil.
Drizzle with tomato juice and season.
Fold aluminium foil over twice to make an airtight bundle.
Bake 30 to 40 minutes or until internal temperature reads 180ºF (82ºC).

Suggestion

Replace the chicken legs with any other cut (quarter chicken, breast, drumsticks, etc.)
