Recipe ingredients
- 1 white onion, sliced
- 1 Tbsp. (15 mL) extra light olive oil *
- 1 (398 mL) can diced tomatoes *
- 2 Tbsp. (30 mL) fresh chopped parsley
- 1/2 tsp. (2.5 mL) ground Cayenne pepper
- Salt and pepper to taste
- 2 zucchinis, sliced
- 4 boneless chicken breasts.
Preparation
In a frying pan, heat oil and cook onion until soft but not browned.
Add tomatoes, parsley and seasoning.
Bring to a boil and cook 2 to 3 minutes, stirring from time to time.
Add zucchinis and chicken.
Bring to a boil again, cover and simmer 10 to 15 minutes or until the chicken is cooked. Serve.
