Recipe ingredients
- Sauce
- 2 Tbsp. (30 mL) butter*, melted
- 1 cup (250 mL) milk
- 1/3 cup (80 mL) fresh grated Parmesan cheese
- 1 1/2 Tbsp. (25 mL) flour*
- Lasagne
- 9 lasagne noodles
- 1 Tbsp. (15 mL) canola oil*
- 1 clove garlic, minced
- 1 small onion, chopped
- 1 broccoli, chopped
- 2 carrots, grated
- 1 red or green pepper, cut in thin strips
- 2 cups (500 mL) ricotta cheese
- 2 cups (500 mL) grated mozzarella cheese
Preparation
Sauce
Combine butter and flour. Whisk in milk and cook over medium heat or in microwave on high, stirring frequently until thickened. Add parmesan cheese.
Lasagne
Preheat oven to 350ºF (180ºC).
In large frypan, heat oil . Stir-fry vegetables for 4 to 5 minutes or until tender-crisp. Set aside.
In 12 inch x 8 inch (30 cm x 20 cm) baking dish, spread 1/3 sauce on bottom, top with 3 noodles, ½ cup (250mL) ricotta cheese, 1/3 vegetable mixture and 1/3 cup (80mL)mozzarella cheese. Repeat layers. Top with 3 remaining lasagne noodles, remaining sauce, vegetables and mozzarella.
Cover and bake for 35 to 40 minutes. Wrap and chill leftover lasagne.
