Recipe ingredients

  • 6 1/2 lb. (3 kg) fresh cherries, pitted
  • 1 cup (250 mL) dark brown sugar
  • 2 1/2 tsp. (12 mL) ground allspice
  • 1 1/4 cups (310 mL) white vinegar
  • 1/4 cup (60 mL) corn syrup*
  • 1 1/2 cups (375 mL) raisins*.

Preparation

In a large saucepan, combine all ingredients except raisins and bring to a boil, stirring constantly until sugar is dissolved.
Reduce heat and simmer gently for 60 minutes until the mixture thickens, stirring frequently to prevent it from burning.
Sterilize jars by boiling them in water.
Sterilize lids.
Add raisins to mixture and simmer for 5 more minutes, stirring constantly.
Fill hot, sterilized 250 mL (1 cup) jars with chutney, leaving 1cm (1/2 inch) headroom.
Screw lids onto jars.
Process filled jars in boiling water for 10 minutes.
Let cool 24 hours and store.

Suggestion

For a spicier chutney, increase the allspice.
