Hearty Vietnamese Soup

Recipe ingredients
- 3 cups (750 mL) vegetable broth*
- 3 cups (750 mL) water
- 6 oz. (180 g) Chinese noodles
- 4 leaves of Napa cabbage
- 12 oz (350 g) sliced tofu
- 2 Tbsp. (30 mL) grated ginger
- Juice of 1 lemon
- 1 green onion, finely chopped
- 1/2 bunch fresh coriander, minced
- 1 1/2 cups (375 mL) bean sprouts
- Fresh ground black pepper to taste.
Preparation
In a large pot,bring broth and water to a boil. Add noodles and cook until soft.
Blanch Napa for 2-3 minutes. Cool quickly in cold water, drain, shred ans set aside.
Cut meat into very thin strips.
Stir tofu, ginger,lemon juice, green onion, coriander, blanched Napa and bean sprouts into broth and noodles. Season to taste.
Simmer 3-4 minutes.
