Recipe ingredients
- 2 1/2 cups (300 g) rotinni, uncooked
- 1 cup (250 mL) diced fresh tomatoes
- 12 pitted black olives*
- 1/4 cup (60 mL) artichoke quarters*
- 1/4 cup (60 mL) sectioned palm hearts
- 1/4 cup (60 mL) diced red pepper
- 1/4 cup (60 mL) diced green pepper
- 3 Tbsp. (45 mL) finely diced Feta cheese
- 2 Tbsp. (30 mL) diced onion
- 2 Tbsp. (30 mL) olive oil
- 2 tsp. (10 mL) balsamic vinegar
- 1 tsp. (5 mL) diced garlic
- 1 tsp. (5 mL) dry basil
- 1 tsp. (5 mL) dry oregano
- Salt and pepper to taste
Preparation
Cook the rotinni in a big pot of boiling, salted water.
In a large bowl, mix all the ingredients together and season to taste.
