Recipe ingredients
- 1 450-g package plain firm tofu
- 3/4 cup (180 mL) Irresistibles extra virgin olive oil*
- 1/4 cup (60 mL) tamari sauce or soya sauce*
- 4 garlic cloves, minced
- 1 1/2 tsp. (7 mL) coriander, chopped
- 1 1/2 tsp. (7 mL) Irresistibles ground cumin*
- 1 1/2 tsp. (7 mL) Irresistibles ground ginger*
- pepper* to taste
- 1/2 onion, chopped
- 10 whole coffee or white mushrooms
- 2 stalks celery, sliced on a slant
- 1 14-oz. (1 398 mL) can of miniature corn*
- 8 radishes, sliced
- 2 cups (500 mL) snow peas
- 1 1/2 cups (375 mL) bean sprouts
Preparation
Drain and cube tofu. Set aside.
In a bowl, mix 2/3 cup (160 mL) oil, tamari or soya sauce, garlic, coriander, cumin, ginger and pepper together. Add cubed tofu and refrigerate for 30-45 min.
In a skillet, cook onion, mushrooms, celery, corn in remaining oil to desired degree of tenderness.
Add tofu and 3 Tbsp. (45 mL) of marinade. Add snow peas, radishes and bean sprouts and cook a few minutes to heat everything through.
